If you know me, you know that I tend to get just slightly obsessive about new crafts & projects. So, naturally, I can't wait more than one week before making another type of cheese! Bad enough I have to wait till the weekend to make the timing steps work out - 12 hours ripening, 12 hours in the molds. I'm just starting the first part tonight, so more updates will be following.
